Umbrian wheat field at altitude, late afternoon, dry stone wall along a path. Documentary landscape.
Place
Umbria sits inland and at altitude, the dry center of Italy. Durum wheat grown here ripens slowly in the mountain climate, building the density that survives milling and drying. All four shapes in this box start in the same field.
Spaghetti drying on wooden rods inside an Umbrian workshop, side window light, bronze pasta tooling on the workbench. Documentary process.
Process
The wheat is milled into semolina (semola di grano duro). Each shape is extruded through its own bronze die (trafila al bronzo), which cuts the form and leaves the surface rough. Fusilli get their spirals, penne get their ridges and hollow, bucatini get the hole through the center, spaghetti stays straight. All four are slow-dried on racks for 24 hours at low temperature. No enrichment, no additives.
Two pairs of hands, an older worker and a younger one, shaping semolina on a worn wood bench inside an Umbrian mill. Faces deliberately out of frame.
People
The family we work with in Umbria makes all four shapes. Same mill, same bronze dies, same slow-drying rooms. Three generations of the same method. We visit twice a year. One source for everything in this box.

How to use it

Questions

  • What shapes are included?
Two bags each of spaghetti, fusilli, penne rigate, and bucatini. Eight bags total, 500g each.
  • How do I cook each shape?
Spaghetti and fusilli: boil 9 minutes. Penne: 11 minutes. Bucatini: 4 minutes. Always in generously salted water. Finish 1 minute in the sauce with a spoonful of the starchy pasta water.
  • What does slow-dried actually mean?
24 hours on a drying rack at low temperature, versus under an hour at high heat in an industrial dryer. Slow drying preserves the flour's flavor and keeps the pasta's structure stable in the pot.
  • Are all four shapes from the same source?
Yes. One family, one mill in Umbria. Same semolina, same bronze dies, same slow-drying rooms for all four shapes.
  • How long does it keep?
Sealed, up to 24 months in a dry pantry. Once opened, use within a few months for best texture.
  • How is this shipped?
From our New York warehouse via Amazon fulfillment. In-stock orders ship in 1-2 business days. Free shipping over $75.
  • What if it arrives damaged, or I don't love it?
Write to us. We refund within 60 days, no questions.

Every shape cooked beautifully

Bought the variety pack because our household can never agree on a pasta shape. Turns out everyone was happy. The ridged pieces grabbed a chunky tomato sauce, the long pasta stayed pleasantly firm, and nothing turned gummy when I reheated leftovers for lunch. Even my youngest, who usually negotiates every bite, asked for seconds with just butter and cheese. The different bags also make weeknight dinner feel less repetitive without me having to think very hard. BIG win for tired parents!!

A useful tour of the shapes

I sent this variety pack to my brother after he moved into his first apartment, partly as a joke because his pantry contained one lonely box of instant noodles. He called a week later to report that he had cooked the first bag and wanted sauce advice. That alone earns points. We opened another shape when I visited and made a simple tomato sauce together. The pasta held its bite, caught the sauce well, and did not collapse when he reheated the leftovers the next afternoon. Having several shapes makes the box feel like a proper gift instead of just groceries, but everything is practical enough to use on an ordinary Tuesday. The packaging arrived tidy and none of the bags had split. A small card naming the shapes more prominently would help a total beginner, since my brother held one up on video and asked me what he was looking at. Minor issue. He is now voluntarily cooking and texted me a picture of dinner last night, so this pack accomplished more than I expected

Finally tested every shape

Bought the variety pack because everyone in my house insists a different shape is 'the best.' We made one package each Sunday for a month. The spaghetti held a simple tomato sauce beautifully, the shorter shapes survived baked leftovers without turning soft, and the bucatini caused a ridiculous amount of slurping at the table. My youngest usually leaves half his dinner, but he asked for seconds twice. I liked that each package cooked up with a firm bite when I followed the timing and checked a minute early. Nothing stuck together after draining, even when I was distracted finishing the sauce. It also made weeknight dinner feel a little less repetitive without requiring a new recipe every time. current household vote is still tied, so I guess we need another box for the rematch

Fun pantry upgrade

We worked through the different shapes over a few weeknight dinners and each one held sauce better than the usual boxes from our grocery store. One went with pesto, one with a chunky tomato sauce, and the last became a baked pasta situation with whatever cheese was left in the fridge. All cooked up with a pleasant bite and none turned gummy in the leftovers. Its a nice way to try several shapes without committing to a stack of the same box. Would also make a smart housewarming gift

The absolute best pasta! Have been ordering it religiously since our trip to Italy.

Some shapes better

Spaghetti and fusilli were excellent. Penne was just ok for us, maybe I overcooked it by a minute. Good box but I would buy the shapes separately next time.

Pasta night box

Used this for Sunday dinner because I couldnt pick a shape. The spaghetti held sauce, the fusilli was great for leftovers, and the penne made my jar sauce look fancier than it deserved. HUGE difference from the usual grocery box.

Shapes are all good but bucatini won

bucatini won my household vote. spaghetti was second. both reordered. the variety pack was worth it just for figuring this out.

Gave three as gifts

Bought three variety packs for three different people. All three were pleased. One of them reordered on their own within two weeks. Thats the conversion.

Fine pasta nothing more

Fine. All the shapes cooked fine. Nothing stood out to me as exceptional. Maybe my expectations were too high after reading the reviews. Would not reorder the variety pack. Might try one shape on its own.

All consistent quality

The quality holds across every shape. Same bronze die roughness, same al dente hold, same behavior with sauce. Thats the kind of consistency that makes you trust the whole catalog.

Converted my whole dinner table

Made a different shape each Friday for a month. By week three my family was requesting their favorites. By week four I had a reorder going. This is how you get people to care about pasta.

Good but wait on reorder

Good pasta in every shape. I'm just waiting to finish the packs before I reorder specific shapes. Nothing wrong with the product itself.

Dinner for weeks

Cooked a different shape every Sunday for a month. Had something to look forward to every week. Learned the cooking times and preferences for each one. Now I know exactly what I want.

The sampler did its job

The whole point of a sampler is to help you figure out what to commit to. This one did that perfectly. Ending with a big reorder of two shapes. The variety pack paid for itself.

A bit much for one household

For a household of two, this was a lot of pasta to work through. Good quality, just a lot. Probably better as a gift or for a bigger family.

Found my shape

Spaghetti, rigatoni, trofie, bucatini. All of them were good. The trofie is now my permanent reorder. The way it grabs sauce in every twist is something I hadn't experienced with grocery store trofie.

Smart gift

Sent as a gift to a couple who cooks. Got a message back saying it turned three separate dinners into 'an event.' Good gift.

We have opinions now

My household did not used to have opinions about pasta shapes. We have opinions now. The variety pack caused this. The bucatini is my husband's, the rigatoni is mine, and we're still arguing about the spaghetti.

Pretty good variety

Pretty good variety. Not all shapes are my favorite but they're all solid. Got my money's worth.

Variety pack is the smartest order

If you're new here, order this first. Try everything. Then reorder the ones you loved. The slow-dried texture is consistent across every shape and the bronze die roughness is visible. Quality is not an accident.

Good gift for a pasta person

Gave this as a housewarming gift. The recipient is a serious home cook and she was very pleased. She texted me two weeks later to say the rigatoni had become her new Sunday pasta.

Nice intro but I already knew what I wanted

I ordered this to try before committing. In retrospect I should have just ordered the shape I wanted. Everything was good but now I have half-used bags of shapes I wont cook as often.

Discovery pack did its job

Each shape held al dente differently and the bronze die texture is consistent across all of them. Really good starting point if you dont know where to begin. I ended up loving the trofie best.

Great intro to the whole line

I wanted to try Gusta pasta before committing to a bigger order. This was the right move. Every shape I tried was noticeably better than what I had been buying. Now I know exactly what to reorder.

Good value for trying the line

Good value for what you get. Tried everything. Liked most of it. Will reorder two or three shapes specifically. The trofie and rigatoni were my favorites.

The perfect way to start

Ordered this because I didnt know which pasta to commit to. Tried all the shapes over two weeks. The bucatini won. Ordered three bags of bucatini the following week. Exactly what the variety pack is for.

Six Italian regions. Nothing reformulated. Imported direct.
