The Ligurian coast between Portofino and the Cinque Terre is where Genovese basil has been grown for centuries. The combination of sea air, thin soil, and intense summer light gives the basil a sweetness that basil from elsewhere does not have. Pesto Genovese is the dish this region is built on.

Process
The basil is cold-processed within hours of harvest to prevent oxidation. Extra virgin olive oil carries the flavor without cooking it. Grana Padano, pine nuts, and a small amount of cashew give the paste its body without masking the basil. No heat at any stage.

How to use it

Stir into freshly cooked pasta off the heat. Never add pesto to a hot pan. For trofie or spaghetti, use 2 tablespoons per 100g of pasta. Also excellent on bruschetta, as a spread, or stirred into minestrone at the table. Refrigerate after opening and use within 5 days.

Cold-processed means the jar goes straight from blender to packaging. No cooking, no pasteurization. Keep it cold and use it quickly after opening.

Tossed this with warm pasta and a spoon of cooking water... dinner in ten minutes. fresh basil flavor, good texture, no need to fuss with it. tbh I also spread the last bit on a turkey sandwich the next day. Very good, just wish the jar were bigger

Opened this on a night when cooking was absolutely not happening. Tossed it with hot pasta and a spoonful of pasta water, done in ten minutes. Strong basil flavor and a nice texture, though I wanted a little more garlic. Used the rest on a turkey sandwich the next day and liked it even better there

Saved a chaotic dinner

Had one of those evenings where everyone was hungry at a different time and I had absolutely no plan. I boiled pasta, opened this pesto, and expected a merely acceptable emergency meal. Instead my daughter came back into the kitchen asking what smelled so good. I loosened the pesto with a little pasta water, tossed everything together, and added some toasted breadcrumbs because that was what we had. The sauce coated the noodles evenly and tasted fresh and savory, with enough basil presence that it didnt vanish once mixed in. My son, who normally inspects anything green like it has personally offended him, ate a full bowl and asked for more. Later I used the spoonful left in the jar on a mozzarella sandwich. Also excellent. Is it pricier than the supermarket tub? yes. Did it turn a chaotic night into a dinner everyone actually ate? also yes. Keeping another jar around for the next household meltdown

This is what pesto should taste like

I grew up in a house where my mom made pesto from scratch every summer when basil was in season. She stopped years ago and we all just made do with whatever was at the store. This is the first jarred version that actually reminds me of hers. The color, the smell when you open the jar, the way it coats pasta.
