Process
Semolina, water, bronze die. The die cuts the hollow through the center of each strand. That hollow is what makes bucatini: the sauce works from the outside and each strand draws a thread of it through the center with every bite. Slow-dried for 24 hours at low temperature, like the other shapes from this mill.

Great shape for Sunday sauce

Bucatini cooked up firm and the hollow center grabbed more sauce than I expected. One package feeds fewer people than our usual grocery box, so check the weight before planning dinner. Quality was excellent though, and leftovers were still good the next day

The sauce goes inside!!

Made bucatini for friends and the hollow center turned dinner into an event. Sauce clung outside and snuck into the noodles, so every bite had more flavor than regular spaghetti. It stayed firm while I finished salad and got everyone to the table, which took longer than planned. One friend had never seen bucatini and kept holding pieces up to the light like a tiny telescope ๐Ÿ˜‚. Silly, delicious, and definately going into the regular rotation

Heavy sauce pasta

Real slow-drying result

You can taste the difference that slow drying makes when you bite into it al dente. The interior stays firm. The exterior has something to grab. This is the pasta that made me stop buying the supermarket version.

Worth every extra dollar over De Cecco

I've been buying De Cecco bucatini for years and thought it was fine. Tried this once. The texture difference is real, the al dente hold is better, the sauce clings differently. It's worth the price difference.

The hole matters more than you think

I always thought the hole in bucatini was a fun shape detail and not actually functional. Made this with a tomato and guanciale sauce and understood immediately that the hole matters. Sauce was inside every piece of pasta. Different eating experience.

You can see the rough texture on the dry pasta before it even goes in the water. After cooking, the sauce clung in a way that made the whole dish feel more put-together than the same recipe with supermarket pasta.

Kids ate it without complaint

Still al dente as leftovers

Perfetto for amatriciana

perfetto. used it for amatriciana, used it for cacio e pepe, used it for a simple olive oil and garlic. all three were better than with any pasta I had before. the texture and the tube work together

Pretty good but De Cecco is fine too

Tastes better than De Cecco honestly. Just not sure the price difference is worth it every week. For a special dinner yes. For tuesday night not sure.

Doesn't break during cooking if you're careful

I was warned that bucatini breaks in the pot. I was careful, lowered it slowly as it softened, no breaks. Perfect cook. Sauce went inside the tube. Dinner was great. The rough surface on this pasta is something you notice the first time you use it.
